Polipo del formaggio ? Cheese ball shaped like an Octopus, Cream, provolone and Parmesan. Should be decorated with red caviar but no one but me likes it.
Antipasto ? Before Pasta
Molluschi cotti ? Clams Casino
Antipasto di Cannellini ? A mixture of Cannelline beans, pieces of shrimp, chopped red onion, and chopped fresh basil dressed with EVO and Balsamic Vinegar.
Insalata di Rinforzo ? A steamed cauliflower head on a platter and dressed with roasted red peppers, capers, black and green olives and pickled carrots dressed with EVO. It is decorated to look like a snow-covered mountain.
Pasta
Aragosta e ravioli di mascarpone - Homemade ravioli stuffed with lobster and mascarpone cheese and dresses with herb butter.
Polpette di Baccala ? Baccala (salt cod) balls deep fried and server with lemon wedges
Entrant ? Entree
Pesci cotti e verdure - Grouper backed in phyllo dough with a Lobster reduction with cream, white wine and shallots. We are also serving saut?ed spinach in EVO and garlic with this.
Dolci ? Dessert
Torta del rum ? Italian rum cake server with rum spiked orange marmalade and whipped cream.
Caff? e cordiali ? Coffee with Sambuca or Brandy

sounds Great, Is that a traditional menu or your own variation.
The Antipasto di Cannellini and Polpette di Baccala sound particually appealing. Can you get salt cod ok and have you started soaking it yet

Sean,
Use whatever you want. The recipes came from the TV special ?An Italian Christmas with Mario & Giada? http://www.foodnetwork.com/food/show..._35710,00.html
Fish for Christmas is traditional in my family but some of these dishes are not. My family tended to cook more southern Italian and less costly then I do so there would have been things like Linguine with red clam sauce for the pasta course and the entr?e would have been the cod. But the baked clams and the two antipasti dishes are something they would have served.
The cod goes in the water Thursday morning. Getting special ingredients in Cincinnati is not hard we shop at Jungle Jims http://www.junglejims.com/

I watched some of that Trav.
Good show. Very interesting.
I watch both of their shows every once in a while.
Mario makes some intersting stuff and other than the obvious reasons for watching Giada she makes some fun stuff that almost everyone can can make. (good ideas for kids a lot of the time)
